Yom Ha’atzmaut Sameach!

As some of you may know, Yom Ha’atzmaut is tomorrow! So I’d like to give a shout out to my home away from home and say HAPPY BIRTHDAY ISRAEL!

So with that being said, I was inspired by my aunts own baking ventures to celebrate this glorious day so I decided to make my own blue and white cookies, yes a play on the original black and white. And the best part about it, there’s no debate which side is better. Is it the chocolate or the vanilla? In this case, who cares? There is only vanilla! But enough rambling. Just one more time, Happy 65th Birthday to Israel! And now for the recipe…

Blue and White Cookies

2 eggs

1 cup of butter, softened (2 sticks)

2/3 cup sugar

2 tsp vanilla extract

1 tsp salt

2 cups flour

Place all the ingredients in the bowl of an electric mixer. Beat it slowly until ingredients are incorporated then gradually speed it up. Once ingredients are well incorporated, roll it into a ball and chill in the refrigerator for at least an hour.

Preheat the oven to 350. After dough is firm and chilled, roll into balls, the size you’d want your cookies to be because the dough doesn’t spread much. Place balls on a baking sheet 2 inches apart from each other. Bake for about 10 minutes. Take them out and let them cool before icing them.

For the Icing

1 cup confectioner sugar

2 tbsp hot water

1 tsp oil

1/4 tsp vanilla extract

drop of lemon juice

2 drops blue food coloring

Combine all the ingredients through the lemon juice. Mix together and split between two bowls. In one bowl drop in the 2 drops of blue food coloring and mix well. Ice one half of the flat side of the cookie with the blue icing and ice the other half with the white.ย Wait till it hardens then enjoy!

Pan Roasted Chicken breasts in veal or beef bacon fat

Chicken breasts: 2 each

Veal or Beef Bacon: 1 package or homemade as needed (recipe to come)

Salt and Pepper: as needed

Method of prep:

Preheat oven to 500

Get Saute pan hot add Bacon and render fat

Once crispy remove bacon pieces but leave fat in pan

Get pan screeching hot

Salt and pepper chicken breasts

Place chicken skin side down for 30 to 40 seconds

Place saute pan in oven till temperature reads 165

Remove from oven with oven mitt or towel (PAN WILL BE HOT)

Quickly turn chicken over and give a 10 second kiss to the bottom of chicken

Remove from pan and enjoy.

skin will be crispy and have a meaty and smokey flavor.

How to make Chocolate Sorbet :)

chocolate sorbet 2chocolate sorbetYou will need an ice cream machine. You must buy one for this recipe and its an awesome machine to have. this is a very rich and delicious sorbet


Water: 38 oz

Sugar: 7 oz

Trimoline (invert sugar): 2 oz

Cocoa powder: 4 0z

Bittersweet chocolate: 10.5 oz

Method of prep:

Bring water, sugar and invert sugar to a boil and simmer for 5 minutes

Add cocoa powder and whisk till smooth and bring to a second boil

Remove from heat add whisk in chocolate and be sure chocolate melts completely


Cool over water bath by spinning it

Put in machine till soft serve

Put in freezer till hard

How to make Bloody Mary Gelato

You will need a Gelato machine which is hard to find. If you happen to stumble upon one make this recipe because it is absolutely interesting, different and delicious.

Ingredients for Gelato:

part 1:

Milk: 38 oz

cream: 8 oz

sugar: 5 oz

trimoline (invert syrup): 1.5 oz

vanilla bean: 1 each

part 2:

eggs: 3.5 oz or 2 eggs

egg yolks: 5 oz

sugar: 4 oz

method of prep:

steep fennel sprigs in milk and let cool

part 1: heat part 1 ingredients to a scald (mini boil right before boiling)

whisk part 2 in a separate bowl

temper scalding liquid with part 2 mixture (pour a little scalding liquid to part to to raise temperature so sauce does not break)

return tempered mixture to scalding mixture and cook to 178 degrees no higher while whisking constantly to not cook eggs

cool mixture over ice bath and set aside

ingredients for blood mary:

fennel bulb: 1 each

roma tomatoes: 1 LB

worcestershire sauce: 4 splashes

salt and pepper: to taste

oil: as needed

tabasco sauce: 4 splashes or more if you like spicy

method of prep:

chop fennel bulb keeping sprigs to steep in milk

blanch tomatoes peel skin and remove seeds

roast tomatoes with salt and pepper and olive oil for 10 minutes at 350

saute fennel till lightly browned

keep seeds and juice and push through a strainer

combine tomatoes, fennel, juices, salt, pepper, tabasco and worcestershire sauce


add mixture to cooled gelato mixture

taste and adjust seasoning

put in gelato machine until creamy

How to make American vanilla ice cream

You will need an ice cream maker and we hope you have one.


heavy cream: 10.5 oz

Milk whole: 21 oz

sugar granulated: 10.5 oz

vanilla bean, split: 1 each

method of prep:

scale ingredients

combine all ingredients in pot

heat mixture to 180 degrees

cool quickly over ice bath

freeze in an ice cream machine with 100% overrun till soft serve consistency

put in freezer till hard
