Pan Roasted Chicken breasts in veal or beef bacon fat

Chicken breasts: 2 each

Veal or Beef Bacon: 1 package or homemade as needed (recipe to come)

Salt and Pepper: as needed

Method of prep:

Preheat oven to 500

Get Saute pan hot add Bacon and render fat

Once crispy remove bacon pieces but leave fat in pan

Get pan screeching hot

Salt and pepper chicken breasts

Place chicken skin side down for 30 to 40 seconds

Place saute pan in oven till temperature reads 165

Remove from oven with oven mitt or towel (PAN WILL BE HOT)

Quickly turn chicken over and give a 10 second kiss to the bottom of chicken

Remove from pan and enjoy.

skin will be crispy and have a meaty and smokey flavor.
