Happy Shower, E!

So this past Sunday, May 12, which also happened to have been mother day, was the bridal shower for one of my closest friends, Emily, aka E. As part of the festivities, a few friends were asked to help make a dish so that we could eat while we celebrate. And who doesn’t love a good plate of food. So after being asked to make a dish, I decided to go with a dessert. Perhaps something light and fresh. Something different. I decided to make a fresh fruit tart. It’s simple to make and delicious.

Tart Dough:

1 egg yolk

1 tbsp heavy cream

1/2 tsp vanilla extract

1 1/4 cup flour

2/3 cup sugar

1/8 tsp salt

1 stick butter

Pastry Cream:

1 1/2 cup half and half

1/2 cup sugar

2 eggs

1 egg yolk

2 tbsp flour

2 tsp vanilla

Dough Directions:

In a small bowl combine the egg yolk, cream and vanilla and set aside. In a large mixing bowl, mix the flour, sugar and salt until well combined. Cut the butter into small pieces and mix in into the flour mix with your hands until it looks like a coarse crumb mixture. Add in the egg yolk mix and mix with your hands until it resembles a dough. Scoop it out of the bowl and put it into ceran wrap and place in the fridge for at least an hour to make it easier to work with.

Pastry Cream:

In a saucepan, bring the half and half to a boil. In a separate bowl, combine the sugar, eggs and flour. Whisk in the half and half, then pour the whole mixture back into the sauce pan. Whisk it until it becomes thick and comes to a boil. Turn off the flame, pour it into another bowl and whisk in vanilla. Chill in fridge for at least 4 hours.

Assembly:

Take dough out of fridge and press it into a tart pan. Press it until it’s pushed to fill the entire pan and up the sides. (You can roll it out with a rolling pin also but I enjoy pressing it with my hands). Pierce the dough with a fork all over the place, cover with parchment paper and then place baking weights or beans on top. Bake in the oven at 375 for 30 minutes, then take the dough out of the oven, remove the weights and paper and bake for another 5 minutes. Take it out and let it cool.

Pour in the pastry cream and spread it evenly inside the dough. Arrange the fruit however you’d like, using whichever fruit you’d like.
