Yom Ha’atzmaut Sameach!

As some of you may know, Yom Ha’atzmaut is tomorrow! So I’d like to give a shout out to my home away from home and say HAPPY BIRTHDAY ISRAEL!

So with that being said, I was inspired by my aunts own baking ventures to celebrate this glorious day so I decided to make my own blue and white cookies, yes a play on the original black and white. And the best part about it, there’s no debate which side is better. Is it the chocolate or the vanilla? In this case, who cares? There is only vanilla! But enough rambling. Just one more time, Happy 65th Birthday to Israel! And now for the recipe…

Blue and White Cookies

2 eggs

1 cup of butter, softened (2 sticks)

2/3 cup sugar

2 tsp vanilla extract

1 tsp salt

2 cups flour

Place all the ingredients in the bowl of an electric mixer. Beat it slowly until ingredients are incorporated then gradually speed it up. Once ingredients are well incorporated, roll it into a ball and chill in the refrigerator for at least an hour.

Preheat the oven to 350. After dough is firm and chilled, roll into balls, the size you’d want your cookies to be because the dough doesn’t spread much. Place balls on a baking sheet 2 inches apart from each other. Bake for about 10 minutes. Take them out and let them cool before icing them.

For the Icing

1 cup confectioner sugar

2 tbsp hot water

1 tsp oil

1/4 tsp vanilla extract

drop of lemon juice

2 drops blue food coloring

Combine all the ingredients through the lemon juice. Mix together and split between two bowls. In one bowl drop in the 2 drops of blue food coloring and mix well. Ice one half of the flat side of the cookie with the blue icing and ice the other half with the white. Wait till it hardens then enjoy!
